Gluten Free Underground began as an idea that has since morphed into reality. It took nearly five years to bring this idea to fruition and there's always more to come. Several years ago, I received a phone call from my doctor informing me that I must remove all gluten from my diet immediately.
Once I understood which foods contained gluten, I was devastated. I was a self-proclaimed foodie that had attended culinary school and one of my favorite hobbies, anything food, was being drastically changed. Sifting through the gluten-free alternatives was frustrating. Everything tasted like cardboard and the textures were too off-putting for anyone without a gluten allergy to eat.
I began creating and testing my own recipes on friends, family, and coworkers. After taking all feedback into consideration, I would adjust the recipes and try again. Finally, I started to hit my stride. Nobody could tell my creations were gluten-free. My recipes would receive such positive feedback people started to make requests. Cupcakes for birthdays, fudge for the holidays, and dinner parties became a regular occurrence and everything prepared was gluten-free.
Once I had established my skills, I had an idea. It would be amazing to share all my gluten-free finds in one spot. I created this blog to not only share my recipes, but other important aspects of the gluten-free lifestyle. Dining out had its own set of challenges and I wanted to provide a resource in one place guiding those avoiding gluten.
The focus of this blog is to be able to eat gluten-free while enjoying everything without limitations or sacrifices. Gluten Free Underground is constantly evolving and strives to provide a wealth of information related to the gluten-free lifestyle as well as basic cooking principles.
As more gluten-free alternatives become available, the more convenient simple recipes will be available to assist in maintaining a gluten-free lifestyle, even if you are dining with those who are not gluten-free.
